Sausage, Potato and Vegetable Bake

Another weekday evening, another throw-it-all-in-the-oven-and-forget-about-it meal. Homegrown green beans needed eating, and the potatoes had just been dug.



  • Sausages, snipped into meatball-sized pieces.
  • New Potatoes, scrubbed and sliced into thick coins.
  • A large onion, thickly sliced.
  • A couple of carrots, peeled and sliced into thick coins.
  • A Pepper, cut into chunky pieces.
  • Green beans, cut into bitesize pieces.
  • Salt+pepper to season.
  • A little vegetable oil.
Heat oven to 190C.
Combine potatoes, sausages, onions, carrots and vegetable oil in a roasting tin, and toss to lightly coat all the pieces in oil.
Bake in the oven, occasionally tossing to mix the juices coming out of the sausages oven the vegetables, until the potatoes are almost done.
Add the remaining vegetables and toss to coat these in the sausage juices.
Turn up the oven to 200C and let it roast until everything is cooked, and the sausage and potato bits are a bit browned and crispy on top.
Adjust seasoning and serve.
