Some Gluten-Free Pastas for Laura

My friend Laura has asked me to keep an eye out for gluten-free recipes for her.

So, here are a couple of gluten-free pasta recipes from The Pasta Machine Cookbook.



Amaranth Pasta
  • 1 cup amaranth flour.
  • 1/4 cup tapioca flour.
  • 1 egg.
  • 1tbsp olive oil
  • 2 tbsp water

Quinoa Pasta
  • 2/3 cup quinoa flour
  • 1/3 cup potato starch flour
  • 1/3 cup tapioca flour
  • 1 egg
  • 1 tbsp olive oil
  • 2 tbsp water

Slowly knead egg, oil and water into flours.
Add a little extra water if required.
Extrude or roll out thinly and cut into ribbons.
Let dry a little before cooking in lots of boiling water.
