Chocolate Mint Loaf

It's been a while since I posted anything.

I've got into a rut, cooking from the same set of warming winter meals using the same winter fruit and veg each week. The impending spring weather and new season's produce should change things up a bit soon though.

This cake is also part of a rut, being yet another Empty Jar Generating Loaf Cake variant. I do make other kinds of cake too, honest!



  • 100g Butter
  • 150g Plain Flour
  • 25g + 1tbsp Cocoa Powder
  • 3 tsp Baking Powder
  • 75g Sugar
  • 2 Eggs
  • 2 tsp Vanilla Essence
  • one 360g jar of Mint Jelly
  • 60g Golden Syrup
Preheat oven to 200C.
Grease and line a loaf tin.
Combine all ingredients in a mixing bowl and beat together until well combined using an electric mixer.
Pour the batter  into the prepared loaf tin.
Bake until a skewer inserted in the centre of the loaf comes out clean ~45 mins.
Let cool in the tin a for a couple of minutes before turning out onto a wire rack.


Another variant I recently made used a 50-50 mix of homemade mincemeat and golden syrup in place of the original jar of lemon curd. This turned out as a light fruited sponge loaf.
