Baked Chicken Wings and Potatoes

Oh look, another throw-it-all-in-the-oven after work meal! I do cook stuff other than bakes on week day nights sometimes, honest!

The packet of chicken wings had been bought with a view to making something else that never happened and was lurking in the freezer needing using up, so I decided to turn them into an easy evening meal. This would also work with chicken thighs or drumsticks.

  • Chicken Wings - allw 4 or so per person.
  • New Potatoes, sliced into thick coins.
  • A large onion, thickly sliced.
  • A few cloves of garlic.
  • Lemon juice.
  • A little vegetable oil.
  • Salt and Pepper to season
Preheat the oven to 190C.
Spread the potatoes over the bottom of a large roasting tin or ovenproof dish.
Scatter the sliced onions and garlic cloves over the potatoes.
Arrange the chicken wings on the top of the onions and potatoes, and drizzle with lemon juice and vegetable oil.
Sprinkle seasoning generously over the chicken wings.
Cover the top of the dish with baking foil, and bake for about half an hour.
Now remove the foil from the dish, turn the oven up to 200C, and bake until the chicken wing skin crisps up and the potatoes brown at the edges.
Serve with a side salad.
