*Ten* large cucumbers in need of eating.
So here's one way to use them up...
- Half a cucumber, coarsely grated.
- A small onion, coarsely grated.
- Lots of coriander and mint leaves, finely chopped.
- Thick Greek yoghurt.
- Salt, pepper, cumin, sumaq to taste.
Mix everything together in a large bowl, and then chill for a couple of hours to let the flavours mingle. Eat as a salad, or use as a dip for crisps/tortilla chips/pappadums.
