Cucumber Raita

So we're back from holiday and of course the vegetable plants have been busy whilst we were away.

*Ten* large cucumbers in need of eating.

So here's one way to use them up...


  • Half a cucumber, coarsely grated.
  • A small onion, coarsely grated.
  • Lots of coriander and mint leaves, finely chopped.
  • Thick Greek yoghurt.
  • Salt, pepper, cumin, sumaq to taste.

Mix everything together in a large bowl, and then chill for a couple of hours to let the flavours mingle. Eat as a salad, or use as a dip for crisps/tortilla chips/pappadums.
